We love this dessert recipe from the Engine 2 Diet because it’s healthy, yet so easy to make, satisfying and delicious.
Ingredients, Serves 4
2/3 cup all-purpose gluten-free flour
1 1/2 teaspoons baking powder
1 tablespoon vanilla
2/3 cup unsweetened almond or soy milk
3 tablespoons 100% pure maple syrup
2 cups fresh or frozen blueberries (organic wild blueberries are best)
Preparation
– Preheat oven to 350 degrees.
– Sift flour into a medium bowl, then add baking powder.
– Combine vanilla, almond or soy milk, and maple syrup a small bowl.
– Add wet ingredients to dry ingredients and mix until smooth.
– Pour the batter into a non-stick silicone 8-inch square pan. Sprinkle the blueberries over the batter.
– Bake for 45 minutes.
