BADASS BANANA BREAD recipe:

Makes 1 loaf, 12 muffins, or 12 donuts
2 cups whole-grain flour (we use 1 cup whole wheat flour and 1 cup oat flour) 1 teaspoon baking powder
½ teaspoon baking soda 1 teaspoon cinnamon
¼ teaspoon nutmeg
3 brown-spotted medium bananas, peeled and smashed (1¼ to 1½ cups)
¼ cup 100% pure maple syrup
¼ cup water
2 tablespoons unsweetened applesauce 1 tablespoon vanilla extract
1 teaspoon apple cider vinegar
1/3 cup add-ins of your choice: walnuts, pistachios, raisins, or nondairy chocolate chips (I have sort of a heavy hand here and probably use more like ½ cup to make it even more badass)

Directions:

Preheat the oven to 400°F. Line a loaf pan with parchment paper (or get out a nonstick muffin pan or nonstick donut pan).
In a bowl, combine the flour, baking powder, baking soda, cinnamon, and nutmeg. In a large bowl, combine the bananas, maple syrup, water, applesauce, vanilla, and vinegar. Mix the dry ingredients into the wet. Fold in the add-ins.
Pour the batter into the lined loaf pan (or divide among 12 muffin or donut cups). Bake the loaf for 30 minutes (or the muffins or donuts for 15 to 18 minutes), until golden brown on top. Serve warm!
