You’re going to cook the onions in the oven while the pilaf is cooking on the stove (or rice cooker), so don’t just stick the onions in the oven and leave the kitchen! This recipe requires a little bit of effort, but it’s worth it. Preparation time: 25 minutes | Cooking time: 1 hour 20 minutes
Ingredients, Serves 4
4 large Vidalia onions
olive oil spray, optional
salt and pepper
Pilaf:
3/4 cup uncooked brown rice
2 tbsp. tomato paste
water (see instructions for amount)
1/4 tsp. cinnamon
1/8 tsp. ground cloves
1/2 tsp. red pepper flakes–or to taste
1/2 cup brown lentils, rinsed and picked over
1/2 tsp. salt–or to taste
1/2 cup raisins
1/4 cup pine nuts or slivered almonds (optional)
